Seed Crusted Salmon Tacos

You can never go wrong with some finger licking tacos, the messier the better. The trick with a good taco and having plenty of punchy sauces and sides. You can choose to only make one of the sauces and one salsa or go all out, invite some friends over and make them all. Serve it all up in the middle of the table and let people assemble themselves. Make sure to have plenty of napkins available.



Serves 4


Ingredients


Seed Crusted Salmon

2 boneless and skinless salmon fillets

1 tbsp fennel seeds

1 tbsp cumin seeds

1 tbsp nigella seeds

3 tbsp sesame seeds

1 tsp salt


Chipotle Mayo

1 cup mayo

1/2 lime, juiced

1/2 tsp cayenne pepper

1 tsp paprika

1 chipotle in adobo sauce, plus 1 tbsp of the sauce


Tomato Salsa

5 tomatoes, diced

1 red onion, finely diced

1 birdseye chilli, finely chopped

1 handful coriander, finely sliced

1 lime, juiced


Cucumber, Radish and Avocado Salsa

3 cucumbers, diced

1 avocado, diced

4 radishes, diced

1 handful mint, finely sliced

1 handful coriander, finely sliced

1 lime, juiced


Kiwi & Jalepeno Salsa Verde

1 kiwi

2 jalepenos

1/2 tsp sugar

1 lime, juiced

1 large handful coriander

2 cloves garlic, peeled

1 eschallot, peeled


To Serve

Tortillas

Cabbage, thinly sliced


Method


1. For the chipotle mayo, combine all ingredients in a hand blender until nice and smooth. Season with salt.


2. For the tomato and cucumber salsas, combine all the ingredients and season well with, olive oil, salt and pepper.


3. For the kiwi salsa verde, dress the jalepenos, garlic cloves and eschallot with some oil and salt. Place in a foil pouch and make sure it is sealed up. Bake in a hot oven (250˚C) until nicely roasted with slightly charred edges, about 15-20 minutes. Peel the skin off the jalepenos. Add the roasted garlic, jalepenos and onion into a hand blender with all the other ingredients. You want to blend all the ingredients gently using the pulse function, so it remains a little chunky.


4. For the salmon, mix all the seeds and salt together. Sprinkle over all sides of the salmon fillets until well coated. Pan fry fillets over medium heat in some oil. Turn to cook all sides and seeds are nicely browned.


5. Serve up salmon, salsas and sauces with some finely shredded cabbage and tortillas of your choice.
